Around-the-World Festival

Marist College and the Culinary Institute of America (CIA), co-sponsors of the Around-the-World Festival, invite you to experience an exciting adventure of cuisine and entertainment from across the globe. Explore North America and celebrate the epicurean variety of U.S. culinary traditions; indulge in Mexican fiesta; move on to the sunny shores of the Caribbean; feel the sun and sands of Africa; absorb the zest of the traditional Middle Eastern feast; embark on a journey to France and savor authentic French cuisine; travel to the Alps and enjoy hearty and robust German fare; and dive into diverse flavors of South Asia.

Chef Barnes

Whether you choose the United States, Mexico, Germany, the Caribbean, France, Africa, or the many cultures of South East Asia, a full pairing of cuisines, wines, and beers have been skillfully prepared by the Culinary Institute of America’s team led by Chef Brad Barnes, CMC, CCA, AAC.

Chef Barnes, a Culinary Institute of America alumnus, is the Senior Director of Continuing Education and a professor for the North American Association of Food Equipment Manufacturers at the CIA. Prior to this, Chef Barnes was president of GigaChef, LLC, a “consulting company for hotels and high-volume foodservice.” He has also co-authored three books and served as a coach for the United States in three Culinary Olympics.

 

 
Italian Night

To celebrate their 30-year international partnership, Marist College and the Lorenzo de’ Medici Institute (LdM) are co-sponsoring this Italian-themed dinner at which you will form an everlasting bond with the classic gourmet traditions of the many regions of Italy.

The Marist branch campus in Florence, Italy, now serves as the hub for a variety of unique educational experiences offered through this partnership, including full bachelor degree programs, the Freshman Florence Experience, traditional study abroad, a Master’s degree in Museum Studies, summer pre-college programs for rising high school juniors and seniors, and a faculty exchange program.

Professor Marco Cinotti from LdM worked with the Sodexo catering team at Marist to select the menu and pair wines that best compliment the culinary offerings.

Discover the many delights of authentic Italian cuisine, indulging in flavors of the country's vast regions: the sea-faring cuisine of Veneto, the fashionable presentations of Tuscany, or the classic food of Palermo, Sicily. This event is sure to take you on a tasteful tour of Italy and is presented by Marist College’s own Executive Chef Anthony Legname.

A Culinary Institute of America Alumnae, Chef Anthony believes in the proud tradition of providing the finest ingredients with authentic culinary flare and friendly service. Chef Anthony regularly provides cooking demos for the diverse population of students and faculty at Marist.

Chef Anthony has also become a leader in promoting sustainable dining on the Marist College campus. The primary venue for promoting this cause is through the weekly lunch at the “Valley Café”. He develops the menu based on a selected theme or cuisines of the world. His mindset when creating the menu is to incorporate as much local and sustainable product as possible.
