A Great Fish Story... Fueled by their mutual passion for fish, veteran restaurateurs Tim Curci and Chris Parker set out to create a new kind of dining experience. They wanted to build a place that would take the mystery out of fish for people who didn’t eat it very often. They would help their guests understand where the fish they were eating came from, how to have it cooked and best of all - how to have fun with the wide range of delicious flavors and sauces they would develop to perfectly complement a wide range of species. They wanted the place to feel warm, comfortable and inviting inside, but below the surface would lie a dogged commitment to quality and excellence on every level. They would come to call this ambiance “polished casual”. They wanted to provide their guests with the freshest fish possible, so in their search to find fish from the waters worldwide, they hunted down and located fish purveyors with the same commitment to quality as theirs. Using extraordinary thought and care, Chris and Tom designed a ritual where they would receive, inspect and hand cut the fish daily. On January 15, 2000 in St. Petersburg, Florida, the first Bonefish Grill was born. People turned out in droves! The success of their vision has generated restaurant growth that has taken them throughout the Southeast and Northeastern coasts, and today Bonefish Grill has begun expanding throughout the Midwest.

In 1954, Vincent, Joseph & Antonio Coppola arrived in the United States from their homeland of Naples, Italy. They settled in Dutchess County in 1956 while expanding their culinary expertise in several of Poughkeepsie’s finest restaurants. Their dreams were realized in 1961 when their first restaurant was opened on Main Street in Poughkeepsie. By 1976, the three brothers decided that it was time to expand their operation and Coppola’s restaurant was opened in Hyde Park. In 1982, the brothers decided to split the family business to allow the sons to begin the long transition with each taking a restaurant, Coppola’s of Hyde Park, Coppola’s on Main Street and Coppola’s in Highland. By fall 1986, a second generation of Coppola's began bottling and selling their famous Marinara sauce along the eastern seaboard. Antonio and his son, in 1990, entered into partnership and the Treasure Chest in Poughkeepsie and renamed the business Cappuccino’s by Coppola’s and Cordon Bleu Caterers. Our legacy began in the 1940’s with Sam’s Tavern, a small tavern perched on a Seattle hilltop near the University of Washington Campus. Sam sang in a barber shop quartet and often played, “When the red robin goes bob’ bob’bobbin along." Sam loved the song so much he changed the name of the Tavern to "Sam’s Red Robin," later known as simply "Red Robin." In 1969, Sam’s Red Robin became the first Red Robin restaurant, which opened in a 1,200 square foot building on a Seattle hilltop. In 1973, they expanded from jumbo beers, cellophane-wrapped sandwiches and popcorn to include their most popular burgers - the Red Robin Gourmet Cheeseburger, the Red Robin Bacon Cheeseburger and the Royal Red Robin Burger, which is crowned with fresh fried eggs. Red Robin hatches one of America’s only restaurant mascots, a colorful robin named “Red.” Children everywhere became overnight fans. We are the oldest continually operating food, drink & catering facility in this city and the only waterfront restaurant in Poughkeepsie located between the Mid-Hudson Bridge and the “Walkway over the Hudson." The River Station property was originally owned by Baltis Van Kleek in the late 1700’s. By 1871, the property had changed hands several times before being turned into a saloon by George W. Lumb. In 1925, Sam Myer Jr., son of a former building tenant, opened “Myers Clam Tavern” and continued throughout prohibition. Myer’s Tavern catered to locals and the Hudson River Dayline passengers. Rooms were rented upstairs for overnight stays by Dayline passengers. The Dayline dock stood directly at the foot of Main Street, people would disembark spend the day shopping, eating and drinking then return to the Tavern for the night. Myer operated the saloon until his death in 1958. New owners changed the name to “Mike’s Tavern” but hit upon hard times after the Dayliner stopped running. In 1966, a fire claimed the top two floors of “Mikes”. In the years to come, the property was again sold, and the building expanded and remodeled, with parking lots being added. Today the business is a prospering waterfront restaurant.

In the heart of the fruit and vineyard country of Ulster County is John Foglia’s Ship Lantern Inn, oldest restaurant in the Hudson Valley serving continental cuisine. The building dates back to the days of the Revolutionary War. Its nautical decor features miniature sailing ships from Mr. Foglia’s personal collection. Mr. Foglia was one of the four original founders of the renowned “Chef-Boy-Ar-Dee Company,” which was awarded the Army and Navy “E” as a result of sample tastings supplied from the kitchen of this restaurant. In the 1700’s, William Traphagen established a traveler’s inn in Rhinebeck. It is a small settlement carved out of a forested area inhabited by the Sepasco Indians and colonized in the 1680’s by the Dutch. In 1766, William Traphagen’s son, Arent, relocated Traphagen Tavern to the town crossroads where the King’s Highway intersected the Sepasco trail, winding its way down to the river. The Beekman Arms has been here, at the center of Rhinebeck, ever since. A sturdy time and stone building originally built to withstand possible Indian attacks, the Tavern served to aid townsfolk who took refuge at the inn, while the British burned the State Capital, Kingston, across the river. Rhinebeck continued its growth into the 19th century as a popular stage stop between Albany and New York City. Rhinebeck became known as the “Parlor of Dutchess County” for its shaded streets, village hospitality, gracious homes and grand estates. The farms’ Black Angus and the greenhouses’ violets gave the small town national attention. As years rolled by, “the Beek,” as locals call it, continued as the center of social and civic life. In the 1980’s, the Greenhouse room was added to the front of the ballroom, and in 1995, the guests’ rooms were completely renovated.
