Elevating the Dining Experience at Marist
Marist University transformed its campus dining program to elevate the quality, execution, and consistency of on-campus meal service through its partnership with Gourmet Dining. putting student needs at the forefront. With a commitment to high-quality food, innovative choices, and exceptional hospitality, all of which cater to student needs, our partnership with Gourmet Dining redefines how our campus community gathers to eat.

Culinary Experiences and Expanded Offerings
Gourmet Dining delivers fresh-from-scratch meals focusing on wholesome, locally sourced ingredients. Students enjoy an expanded selection of cuisines, from handspun pizza and street foods, to made-to-order international dishes. Couple this with our emphasis on providing enhanced plant-based and allergy-friendly options; Marist Dining strives for inclusion and variety. Additionally, a monthly interactive Teaching Kitchen, led by the Campus Dietitian and Executive Chef, offers students a hands-on learning experience—exploring nutritional and health benefits, creating delicious dishes, and gaining the confidence to recreate them independently.

Enhanced Convenience
An all-inclusive web-based ordering platform drives convenience and innovation for all those on our meal plans. Real-time data helps students navigate their day and place orders remotely and on demand. Our two retail ghost kitchen locations enhance this convenience and allow operators to alter menus on the fly, remain on point with industry trends, and offer recipes from favorite local eateries.

Commitment to Community and Sustainability
A core pillar of our dining service provider, Gourmet Dining, engages with and supports local businesses. Marist Dining offers items from local restaurants at several locations, ensuring partnership and support through our meal plan design. Marist Dining strives to be environmentally conscious through solid waste stream mitigation practices, local and regional sourcing, and purchasing organic produce and products from suppliers whenever possible. Our dining team prides itself on minimizing environmental harm through its business practices.

Mabel combines entrepreneurial skills and community spirit to inspire change.
Inspired to Lead and Foster Community, transferring to Marist transformed Mabel's journey. As a star student and Saxbys' first Student CEO, she gained hands-on experience running a small business. Inspired by the Hudson River views and the fashion merchandising program, Mabel led sustainability initiatives, studied abroad in Italy, and grew as a dynamic leader and learner—all thanks to Marist's supportive, experiential focus.

More Than Just Dining—A Learning Experience
Gourmet Dining goes beyond great food—we focus on education and career preparation. In September 2024, Saxbys, an experiential learning company, opened its café in Marist's Dyson Center atrium. This innovative company is a leadership launchpad, allowing students to take on every role, from barista to Student CEO. Working alongside their peers, students get real-world experience, contribute to the dining program, and have fun.
Students also have the opportunity to work on the dining team. Nearly all of our catering team consists of students. We also have eight semester-based internships within Marist Dining, ranging from wellness and sustainability to marketing. Students appreciate collaborating as a team and acquiring real-world experience.
